Accomplishments in food

Here are two things I’ve made recently: Finnish rye bread and homebrewed summer ale.


Both are recipes I’ve been working on for a while. This is the third iteration of the rye bread recipe. I’ve been making adjustments to the written recipe I have, trying to recreate the taste and texture of the wonderful rye bread (ruispala) that I remember from Finland. What I have learned is: all rye, no wheat; and let the starter sour for twice as long.

The summer ale recipe I’ve developed is half wheat, half honey, with lemon and orange for flavor. Pretty soon the fall harvest will be coming in and I’ll have lots more interesting flavors to play with. I’m still having fun with homebrewing, although my equipment is still pretty limited. The next step I’d like to take in brewing is to find some proper brewing yeasts to work with, but I haven’t gone looking for a source yet.

For now, though, I’m enjoying my bread and ale.
